Random Acts of Cookies
Who doesn’t love chocolate chip cookies? As a part of the “Random Acts of Cookies” initiative that I found on Pinterest, I decided to bake some chocolate chip cookies, put them in cute little boxes, and give them to friends and family. Such an easy, unexpected way to brighten someones day. I love it. While I was on Pinterest, I also came across the BEST recipe for chocolate chip cookies. I had to try it out, so I got together with my good pals Emma and Molly to put the recipe to the test.

We made a few adjustments, so here is the recipe we used.
Ingredients
- 1 stick unsalted butter, room temperature
- ¾ cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 + ¾ cups all-purpose flour
- ½ teaspoon baking powder
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- 1 + ½ cups semisweet chocolate chips
In the bowl of your stand mixer (or large mixing bowl), beat the butter and sugar until just combined. Use low speed and beat no longer than one minute. Add the egg and vanilla and beat until barely combined. The dough will look kinda weird at this point.
In a medium bowl, mix the flour, baking powder, baking soda, and salt. Add them to the butter and sugar bowl, beat until combined. Add chocolate chips and mix. Always feel free to add more chocolate chips! =]
Scoop the dough into your desired size and place the cookies on a baking sheet lined w/ parchment paper. Bake for 10 to 13 minutes, or until the edges are lightly browned. YUM.
While the cookies are baking/cooling, you can make some super cute cardstock boxes.
